1/4 cup coconut sugar

cup of pecans (you can substitute with other nuts if you prefer)

2 large pinches of allspice powder

1 pinch of salt

1/8 cup of water

8 dried pears, finely sliced



Line a tray with parchment paper and set aside.

Bring a nonstick pan to medium heat. Add the pecans and toss slightly for 3 minutes or until the nuts are starting to smell fragrant, with a light roasting aroma. 

Add in the coconut sugar, along with the allspice and salt, stirring rapidly. This should form a dark caramelised syrup within a few minutes. Once the syrup has coated the nuts (but isn’t burning) remove the mixture from the stove and place onto the lined tray. Place the caramelised mixture over the parchment paper then dowse with a little cold water to ‘set’ the mixture.

During this process, the water should run off the caramelised nuts pretty quickly. Once cool enough to handle, drain off the water so that your nut mixture doesn’t go soggy. Put mixture into freezer to finalise the setting process of the caramelised sugar (this shouldn’t need longer than 30minutes). Once set, you can use a pestle or a sharp knife to break up the nut clusters. Pop them into an airtight container with the sliced pear.

Store for three to five days in an airtight container in the fridge. Perfect for your lunchbox snacks or a pick-me-up on the run!
