Carrot Saffron Frosting on Pie

Who needs artificial colours when nature offers up vibrancy like this? Many ‘natural colourings’ can be very expensive for familiies, however a carrot costs less than a dollar and can be steamed in the microwave for convenience in this recipe. Of note – the icing doesn’t actually taste like carrot we just get the beautiful orange (and beta carotene) coming through instead!


1 carrot, peeled and steamed
Pinch saffron (optional)
¼ tsp orange essence
1 C pure icing sugar
½ cup coconut cream


Blend ingredients thoroughly and refrigerate to thicken before serving.
