Healthy Roll Ups

Tasty roll ups – no sugar added.


3 cups roughly chopped apricots (approx.6 apricots)
3 medium mangoes
2 tbsp maple syrup
Pinch salt
Juice of 2 lemons
Optional: 1 tsp sugar to sprinkle over rollups


Preheat oven to 60oC. Line two baking trays with baking paper. Puree the apricots, 1 tbsp maple, little salt and juice of 1 lemon until you form a smooth puree. Set aside. Puree together remaining ingredients. Swirl both mixtures over two trays and rustically mix. Smooth level with a levelling spatula.

Bake on very low heat for 3 to 4 hours until the fruit is slightly translucent and sticky to touch. Set aside to cool. (Please note – cooking times and temperatures will vary depending on your oven and the ripeness of your fruit. If the fruit is blackening, you may need to reduce temperature and cook for longer.) Once cool, sprinkle the dehydrated fruit with sugar if desired.

Use kitchen scissors to cut into strips and ‘roll up’. Store fruit in an airtight, cool container. Please note – without sulphites & preservatives, these will spoil faster than typical dried fruit.
