Hemp protein slice

 

INGREDIENTS

(For The Top Layer)

100g/0.5 cup tightly packed dried apricots, finely chopped

3.5 cups LSA or almond flour

Juice & zest of an orange

½ cup tahini

½ cup rice malt syrup

1 tbsp vanilla essence

2 cups desiccated coconut

Optional: 1tsp ground ginger, or to taste

(For The Bottom Layer)

100g/0.5 cup tightly packed dried apricots, finely chopped

1 tbsp vanilla essence

¾ cup tahini

2 cups hemp protein powder, skim milk powder, or protein powder of your choice

2.5 cups oat meal

0.75 cup rice malt syrup

Juice of 2 oranges

(optional: ½ tsp ground ginger)

To Garnish (optional): Fresh figs or berries.

METHOD FOR MAKING HIGH PROTEIN OAT BRAN SLICE

Line a shallow slice tin with baking paper.

In a large bowl, mix together all ‘Base’ ingredients (you will need to use your hands as this mixture is very sticky and ends up a little dry). Press firmly in the base of the tin to form a flat, tightly packed and flat layer. Set aside

In another large mixing bowl, combine all ‘top layer’ ingredients (again, this will be sticky). Carefully spread across bottom layer and smooth across with hands. (TIP: If you rub a little oil over your hands first, this mixture is easier to work with).

Refrigerate for 1 hour to set. Cut into squares as desired. Will store in the fridge.
