1 frozen banana
Flesh of half a pitaya (preferably dark variety) (pitaya is also known as dragonfruit)
3/4 cup calcium-enriched almond milk
1 tsp rosewater, or to taste
2 tsp chia seeds
Optional to garnish: Lighter pitaya variety, prepared into melon balls.
Place all ingredients into a blender and whizz together until smooth and frothy. Serve immediately.
Add more chia and allow it to set overnight to form a vibrant jelly.
Substitute pitaya with frozen strawberries if desired or if pitaya is not available.
