Tropical Spelt Cake

When I first cooked and photographed this recipe, I made it with a caramelised citrus base. This tasted good but it didn’t POP with a Wow Factor. With the help of a Chef Colleague, we tweaked it up a little using Pineapple and the resultant recipe below totally hums with pleasure. This was a turning point in my cooking – this talented Chef (you know who you are – thank you!) taught me the important lesson of not over-mixing and overcomplicating flavours. EVERYTHING on your dish must fit into the theme you are searching for – citrus speaks of warming Winter spices whereas pineapple alludes to tropical island getaways.
