Pad Thai

Description

This simple Pad Thai dish is a family favorite: quick to make and full of fresh, bold flavor. The sweet and tangy sauce made with coconut aminos, maple syrup, and lime brings everything together perfectly. Tossed with stir-fried peppers, crunchy peanuts, and fragrant basil, it’s the kind of meal that feels comforting yet refreshing. Perfect for busy weeknights or when you just want something light and satisfying.

Ingredients

  • 1 packet rice noodles, 1 tsp olive oil
  • 1 tbsp sesame oil
  • 1 red bell pepper, julienned
  • 1 green bell pepper, julienned
  • Salt to taste
  • ½ cup peanuts, coarsely ground
  • Fresh basil
  • Sauce-
  • 4 tbsp liquid coconut aminos
  • 2 tbsp pure maple syrup
  • 1 tbsp homemade sambal sauce
  • Lime juice (1 lime)

Directions

  1. Boil water and cook noodles with olive oil and a pinch of salt until soft. Drain and set aside.
  2. Mix sauce ingredients in a small bowl.
  3. Heat a little oil in a large pan.
  4. Add peppers and sauté.
  5. Add salt and cooked noodles to the pan.
  6. Pour in the sauce and toss well to coat.
  7. Top with crushed peanuts and fresh basil. Serve warm!
