Oatmeal Chocolate Chip Cookies
Description
These soft, chewy oatmeal chocolate chip cookies are naturally sweetened and made with simple, wholesome ingredients. Ground oats give them a hearty texture, while date palm jaggery and chocolate chips add just the right amount of sweetness. Tender, satisfying cookies, these are perfect with a cup of tea or as an anytime treat.
Ingredients
- 1 cup rolled oats, powdered
- ¼ tsp baking powder
- ½ cup date palm jaggery
- 1½ tbsp coconut oil, melted
- Almond milk (10 almonds blended with 2 1/2 tbsp water)
- ½ tsp vanilla powder
- ½ cup chocolate chips
Directions
- Preheat oven to 360° F.
- Sift and combine all the dry ingredients in a bowl.
- Stir in the wet to form a dough; it will be dry at first, so keep stirring until a cookie-dough texture is achieved. If needed, add 1-2 tbsp extra almond milk.
- Form dough balls (do not flatten), and place on a greased baking tray, leaving enough room between cookies for them to spread.
- Bake for 8–10 minutes.
- They’ll look underdone when you take them out, but let them cool on the baking tray for 10 minutes before touching, and they will firm up.
