Oatmeal Chocolate Chip Cookies

Description

These soft, chewy oatmeal chocolate chip cookies are naturally sweetened and made with simple, wholesome ingredients. Ground oats give them a hearty texture, while date palm jaggery and chocolate chips add just the right amount of sweetness. Tender, satisfying cookies, these are perfect with a cup of tea or as an anytime treat.

Ingredients

  • 1 cup rolled oats, powdered
  • ¼ tsp baking powder
  • ½ cup date palm jaggery
  • 1½ tbsp coconut oil, melted
  • Almond milk (10 almonds blended with 2 1/2 tbsp water)
  • ½ tsp vanilla powder
  • ½ cup chocolate chips

Directions

  1. Preheat oven to 360° F.
  2. Sift and combine all the dry ingredients in a bowl.
  3. Stir in the wet to form a dough; it will be dry at first, so keep stirring until a cookie-dough texture is achieved. If needed, add 1-2 tbsp extra almond milk.
  4. Form dough balls (do not flatten), and place on a greased baking tray, leaving enough room between cookies for them to spread.
  5. Bake for 8–10 minutes.
  6. They’ll look underdone when you take them out, but let them cool on the baking tray for 10 minutes before touching, and they will firm up.
