Thai basil
Description
My all time favorite!
Ingredients
- 1 tbsp sesame oil
- 1 tbsp peanuts
- 2 dried red chillies
- 1 red pepper, cubed
- 1 green pepper, cubed
- Salt
- 1/4 cup thai basil
- Sauce, mix:
- 1 tbsp soy sauce/coconut aminos
- 1 tbsp date palm jaggery/maple syrup
- 1 tbsp red chilli paste/homemade sambal sauce/Jain chilli sauce
- 1/2 cup water
- Tofu:
- 1 packet firm tofu, cut into squares
- 1 tbsp cornstarch
- Salt
- 2 tbsp sesame oil
Directions
- Add cornstarch, salt and pepper to the tofu and mix. Heat oil in a cast iron pan, add the tofu pieces and let it toast from all sides. Remove in a plate.
- Heat oil, add the dried red chillies and the peanuts and sauté. Then add the peppers and sauté for a few seconds. Add salt and the sauce, mix well and then add the toasted tofu and let it simmer for a minute. Add fresh basil and turn off the heat.
