Thai basil

My all time favorite!

Ingredients

  • 1 tbsp sesame oil
  • 1 tbsp peanuts
  • 2 dried red chillies
  • 1 red pepper, cubed
  • 1 green pepper, cubed
  • Salt
  • 1/4 cup thai basil
  • Sauce, mix:
  • 1 tbsp soy sauce/coconut aminos
  • 1 tbsp date palm jaggery/maple syrup
  • 1 tbsp red chilli paste/homemade sambal sauce/Jain chilli sauce
  • 1/2 cup water
  • Tofu:
  • 1 packet firm tofu, cut into squares
  • 1 tbsp cornstarch
  • Salt
  • 2 tbsp sesame oil

Directions

  1. Add cornstarch, salt and pepper to the tofu and mix. Heat oil in a cast iron pan, add the tofu pieces and let it toast from all sides. Remove in a plate.
  2. Heat oil, add the dried red chillies and the peanuts and sauté. Then add the peppers and sauté for a few seconds. Add salt and the sauce, mix well and then add the toasted tofu and let it simmer for a minute. Add fresh basil and turn off the heat.
