Vegan Orange Cranberry Bread
Description
A soft and moist vegan orange cranberry bread with bright citrus flavor, tart cranberries, and optional white chocolate chips or crunchy nuts. It is lightly sweet, fragrant, and perfect for breakfast, snacking, or serving with tea.
Ingredients
- 2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 cup cranberries
- 1/2 cup vegan white chocolate chips, walnuts, or pecans
- 1/4 cup orange juice
- 1/2 cup sugar
- 1/3 cup neutral oil
- 3/4 cup nut milk
- 1/2 teaspoon orange extract or orange flavoring
Directions
- Preheat the oven to 350°F.
- Grease a loaf pan and lightly dust it with flour.
- Sift the whole wheat flour and baking soda together into a large mixing bowl.
- Add the cranberries and white chocolate chips, walnuts, or pecans to the dry ingredients and toss gently to coat.
- In a separate bowl, whisk together the orange juice, sugar, oil, nut milk, and orange extract until well combined.
- Pour the wet mixture into the dry ingredients.
- Using a spatula, gently cut and fold the mixture together just until no dry flour remains. Do not overmix.
- Pour the batter into the prepared loaf pan and spread the top evenly.
- Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the bread cool in the pan for about 10–15 minutes.
- Remove from the pan and transfer to a wire rack to cool completely before slicing.
